Batata Harra

The Lebanese potato side dish known as batata harra is quite similar to Spanish pastas bravas. Gluten-free, vegan and a sinch to make. This recipe is spot on but frying time may take up to 20 minutes. I used new potatoes and they were perfect.


3 potatoes, cut into 2cm cubes

1 tsp. of cumin seeds

1 tsp. of coriander seeds

1/4 tsp. of ground turmeric

5 tbsps. of vegetable oil

Salt and pepper


Rinse the potatoes and then dry them on paper towels. Dry-fry the cumin and coriander seeds in a small frying pan over a very low heat, shaking the pan occasionally, for a few minutes until they give off their aroma. Remove from the heat and grind in a spice mill or in a mortar using a pestle. Tip them into a bowl, stir in the turmeric, and season with salt and pepper. Pour the oil into a frying pan to about 5mm deep and heat. Dust the potatoes with the spices, add them to the hot oil, and cook over a medium heat, tossing frequently, until they are golden and crisp with a tender center. Serve warm.
