Cucumber and Radishes with Feta

This is a super easy salad to prepare and a great accompaniment to any picnic table or BBQ. The cool cucumber and hot radishes work really well with the salty feta. I used dried dill here as sometimes it’s difficult to find fresh dill and dill is one herb that’s perfectly fine to use dried. Serve immediately after dressing this salad to keep it crisp. Serves 4.


1 cucumber

25 radishes

100g of Feta

1 tbsp of olive oil

1 tbsp of white wine vinegar

1 tsp of icing sugar

2 tbsps of dried dill



Wash the cucumber and cut in half lengthways discarding the ends. Using a teaspoon, scoop out the pulp along the length of both halves and discard. Cut the cucumber halves into thin slices diagonally and place in a bowl. Wash the radishes, discard the top and tails and finely slice. Add to the cucumbers in the bowl. In a small cup mix the oil, vinegar and sugar. Add the dill to the cucumbers and radishes and mix well. Crumble in the feta and drizzle with the dressing. Season to taste with salt and pepper. Arrange on a plate to serve and drizzle with extra olive or dill if desired.
