This is a super easy salad to prepare. Za’atar can mean one of two things – the plant that grows in Middle East or the herb blend, a mix of dried herbs, sesame seeds and sometimes other spices. The za’atar plant is a protected species in both Israel and Palestine for fear it will become extinct so it’s nearly always the herb mix we use in the West. If you have no za’atar you can substitute dried oregano for it in this recipe. Serves 4.
1/4 tsp. of salt
1 tbsp. of olive oil
2 tsps. of lemon juice
1 tsp. of icing sugar
2 tsps. of za’atar or dried oregano
25 black olives – pitted
Wash the cucumber and using a vegetable peeler or sharp knife, removed four strips of skin the full length of the cucumber. Slice into thin disks and place in a large bowl. In a separate bowl mix the olive oil, lemon juice, sugar and salt. Drizzle over the cucumber and mix well. Sprinkle on the za’atar again mixing well. Finally stir in the olives and serve.
