Freekah, Feta, Figs and Caramelised Onion Salad

Absolutely delicious salad which can be eaten warm or cold. Freekah differs between brands so use the amount of liquid instructed on the packet. Small portion for a side and a larger portion for a filling main. Looks great too,


4 tablespoons of olive oil

2 red onions thinly sliced

250g whole grain green wheat freekah

1/2 tsp of ground allspice

2 teaspoons of dried mint

100g of feta cheese, crumbled

4 dried figs – diced

2 tablespoons of chopped fresh mint

4 fresh figs – quartered

1 tablespoon of sugar



Heat half the olive oil in a frying pan over a medium heat and add the onions, and cook, stirring occasionally for about 15 mins until browned and carmelized. Meanwhile put the freekah inot a pan, pour in 600ml of water, add a pinch of salt and bring to a boil over a medium heat. Reduce the heat and simmer for 15-20 minutes until the water has been absorbed and the freekah is cooked. Stir in the remaining olive oil, allspice, dried mint, feta, dried figs, and fresh mint and season to taste with salt. Heat a griddle pan over a high heat. Coat the fig quarters in the sugar, add to the pan and cook for 2-3 minutes on each side. Serve the salad garnished with the grilled figs.
