Green Lentils, Rice and Caramelized Onions

Otherwise known as mujaddara or mejaddara in Lebanon or Palestine this dish is a first cousin of Egypts national dish koshari. Seven spice seasoning or baharat is a mix often including any combination of the following spices; nutmeg, coriander, cumin, cinnamon, paprika, cloves, black pepper, all spice and ginger. Alternatively pre mixed blends are widely available in larger supermarkets, Asian grocery stores or independent delis. This recipe can be a main or side, enjoyed hot or cold and is vegan and gluten-free. Enjoy.


200g of green lentils

4 tbsps. of olive oil

5 small onions, sliced

100g of easy cook rice, rinsed

2 tsps. of salt

1/2 tsp. of ground cumin

1/2 tsp. of seven spice seasoning

1/2 tsp. of pepper


Put the lentils in a pan, pour in water to cover and bring to the boil over medium heat. Reduce the heat, cover and simmer for 20 minutes. Meanwhile, heat the oil in a frying pan, add the onions and cook over a medium heat, stirring occasionally for 10-12 minutes until caramelized. Add the rice and salt to the pot of lentils, replace the lid and simmer for 10-15 minutes until the rice and lentils are tender and the liquid has been absorbed. Stir in the cumin, seven spices seasoning, pepper and the carmelized onions and serve warm.
