Really great oranges are coming into season and this salad is a perfect made with any variety. A quick and fresh salad, ticking the vegan and gluten free boxes. The cloves oil garlic I used were massive so maybe half the amount of garlic in the dressing if the cloves are on the super sized size.
4 oranges, peeled and pitch removed
1/4 red onion, thinly sliced
1/2 fennel bulb, thinly sliced
100g pomegranate seeds
2 cloves garlic, crushed
2 teaspoons red wine vinegar
1 tbsp. olive oil
Slice the oranges, put them in a bowl and add the onion and the fennel slices. Mix together the garlic, vinegar and the olive oil in a small bowl and drizzle the dressing over the salad. Sprinkle with pomegranate seeds.
