This recipe for roast chicken couldn’t be easier. I substituted our za’atar dukkah below and used 2 tbsps. with 2 tbsps. of olive oil for a lovely crunchy crust. FYI, the cooking times listed are for a 1.2 kg chicken so please adjust if your chicken is on the larger size.
1.2 kg chicken
1 small onion, halved
1 tbsp. of za’atar or za’ater dukkah
2 tbsps. of olive oil
Salt and pepper
Preheat the oven to 200c. Put the onion in cavity of the of the chicken and season well with salt and pepper. Wrap the chicken in foil and put it in a roasting pan. Roast for 30 minutes, then reduce the oven temperature to 180c and roast for another 50 minutes. Meanwhile mix together the za’atar dukkah and olive oil in a bowl. Remove the chicken from the oven, unwrap and remove the foil, then brush the za’atar mixture over the chicken. Return the chicken to the oven and roast for another 10-15 minutes. Remove from the oven and serve.
